Chili Rice Bowl

Ingredients

4cups UNCLE BEN’S® Boil-In-Bag Rice
1can chili with beans
1cup low fat Monterey Jack cheese shredded
1/2cup green chili peppers drained
30small olives drained
8 6" flour tortillas

Instructions

1. In a large microwave-safe bowl, combine chili, green chilies, olives and cheese. Cover and heat on high power until cheese is melted, about 5 minutes.
2. Cook rice according to package instructions.
3. Cover bottoms of four inverted pans or dishes with tortillas to make four bowls. Toast tortilla bowls well under broiler.
4. Place 1 bag of rice in each tortilla bowl. Hollow out center of rice and pour 1/4 of chili mixture over rice in each bowl. Top with extra cheese.

tips and notes
Serve at a party with tortilla chips. Add in ground beef to make it more hearty and filling.
