Ingredients
| 4 | cups UNCLE BEN’S® Boil-In-Bag Rice |
| 1 | can chili with beans |
| 1 | cup low fat Monterey Jack cheese shredded |
| 1/2 | cup green chili peppers drained |
| 30 | small olives drained |
| 8 | 6" flour tortillas |
Instructions
1. In a large microwave-safe bowl, combine chili, green chilies, olives and cheese. Cover and heat on high power until cheese is melted, about 5 minutes.
2. Cook rice according to package instructions.
3. Cover bottoms of four inverted pans or dishes with tortillas to make four bowls. Toast tortilla bowls well under broiler.
4. Place 1 bag of rice in each tortilla bowl. Hollow out center of rice and pour 1/4 of chili mixture over rice in each bowl. Top with extra cheese.
