Ingredients
| 2 | 2 cup bags UNCLE BEN’S® Boil-In-Bag Rice |
| 2 | medium tomatoes diced |
| 1 | can pinto beans rinsed and drained |
| 3/4 | cup cheese sauce from jar |
| 1 | Tbsp. cilantro chopped |
| 1/4 | tsp. cumin |
| 8 | 6" flour tortillas warmed |
| salt and pepper to taste |
Instructions
1. Cook rice according to package instructions.
2. In a saucepan, combine rice, cheese sauce, beans, tomatoes and cumin. Cook over medium-low heat 3-4 minutes until hot. Salt and pepper to taste.
3. Stir in cilantro.
4. To serve, spoon 3 tablespoons rice mixture onto warm tortilla, add garnishes as desired and roll up.
5. Optional garnishes: chopped onions, shredded lettuce, nonfat sour cream, sliced ripe olives, sliced avocados or Monterey Jack Cheese.
