Chili Con Queso Tortillas

Ingredients

22 cup bags UNCLE BEN’S® Boil-In-Bag Rice
2medium tomatoes diced
1can pinto beans rinsed and drained
3/4cup cheese sauce from jar
1Tbsp. cilantro chopped
1/4tsp. cumin
8 6" flour tortillas warmed
salt and pepper to taste

Instructions

1. Cook rice according to package instructions.
2. In a saucepan, combine rice, cheese sauce, beans, tomatoes and cumin. Cook over medium-low heat 3-4 minutes until hot. Salt and pepper to taste.
3. Stir in cilantro.
4. To serve, spoon 3 tablespoons rice mixture onto warm tortilla, add garnishes as desired and roll up.
5. Optional garnishes: chopped onions, shredded lettuce, nonfat sour cream, sliced ripe olives, sliced avocados or Monterey Jack Cheese.

Serve with tortilla chips and garnishes to make a festive plate of nachos.
