Ingredients
| 1 1/2 | cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 | chicken quartered |
| 1 | can tomatoes drained and chopped |
| 1 | onion sliced |
| 1 | green bell pepper seeded and sliced |
| 1/2 | cup green olives chopped |
| 1 | tsp. garlic powder |
| 1 1/2 | tsp. basil |
| 2 | Tbsp. olive oil |
| 1 1/2 | pints chicken broth |
| 3 | Tbsp. tomato paste |
| salt and pepper |
Instructions
1. In a large skillet heat the oil and brown the chicken pieces well, remove and set aside.
2. In the same skillet, add the onions, peppers, basil, garlic powder,salt and pepper; sauté until the onions are transparent.
3. Add the remaining ingredients and the chicken. Bring to a boil, cover, reduce to a simmer and cook for about 20 minutes
