Ingredients
| 2 | cups UNCLE BEN’S® Boil-In-Bag Rice |
| 1 | lb. chicken breasts, boneless and skinless diced |
| 4 | oz. grated cheddar cheese |
| 1 | celery stalk diced |
| 1 | small onion diced |
| 1 | can diced tomatoes |
| 4 | ribs Poblano chilies cored and seeded |
Instructions
1. Prepare rice according to package instructions.
2. Cut Poblano chiles open while leaving shape intact. Core and remove seeds.
3. In a skillet, brown the chicken, add the tomato, onion and celery, and cook 5 minutes.
4. Add the rice to the chicken and vegetables. Stuff the chiles with the mixture.
5. Top each chile with cheese, place in baking dish, cover with foil and bake 30 minutes at 350 degrees F.
