Chicken and Rice Stuffed Poblano Chiles

Ingredients

2cups UNCLE BEN’S® Boil-In-Bag Rice
1lb. chicken breasts, boneless and skinless diced
4oz. grated cheddar cheese
1 celery stalk diced
1small onion diced
1can diced tomatoes
4ribs Poblano chilies cored and seeded

Instructions

1. Prepare rice according to package instructions.
2. Cut Poblano chiles open while leaving shape intact. Core and remove seeds.
3. In a skillet, brown the chicken, add the tomato, onion and celery, and cook 5 minutes.
4. Add the rice to the chicken and vegetables. Stuff the chiles with the mixture.
5. Top each chile with cheese, place in baking dish, cover with foil and bake 30 minutes at 350 degrees F.
