Caribbean Rice

Ingredients

2cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1medium green bell pepper diced
1small onion diced
3 garlic cloves
2Tbsp. parsley chopped
3 green onions sliced
1/4cup green olives
4cups water
1/4cup olive oil
1 1/2Tbsp. capers chopped
1/3cup tomato sauce
1/4tsp. black peppercorns cracked

Instructions

1. In a saucepan with a tight-fitting lid, heat the oil and sauté the onions and peppers until the onion is transparent.
2. Add the remaining ingredients except for the parsley and green onions. Bring to a boil, reduce to a simmer, cover and cook until the water has been absorbed, about 20 minutes.
3. Stir in the parsley and green onions and serve.

Try adding diced chicken or ham to the rice.
