Ingredients
| 2 | cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 | medium green bell pepper diced |
| 1 | small onion diced |
| 3 | garlic cloves |
| 2 | Tbsp. parsley chopped |
| 3 | green onions sliced |
| 1/4 | cup green olives |
| 4 | cups water |
| 1/4 | cup olive oil |
| 1 1/2 | Tbsp. capers chopped |
| 1/3 | cup tomato sauce |
| 1/4 | tsp. black peppercorns cracked |
Instructions
1. In a saucepan with a tight-fitting lid, heat the oil and sauté the onions and peppers until the onion is transparent.
2. Add the remaining ingredients except for the parsley and green onions. Bring to a boil, reduce to a simmer, cover and cook until the water has been absorbed, about 20 minutes.
3. Stir in the parsley and green onions and serve.
