Ingredients
| 2 | cups UNCLE BEN’S® Instant Rice |
| 2 | cans black beans drained and rinsed |
| 1 | lime cut into wedges |
| 1 | tsp. cider vinegar |
| 2 | tsp. caribbean spice blend |
| 2 | cups vegetable broth |
Instructions
1. In a medium saucepan, combine rice, vegetable broth, beans and spice blend.
2. Heat to boiling. Cover, reduce heat and simmer 5 minutes or until rice is tender.
3. Add cider vinegar.
4. Toss and serve with a lime wedge.
