Cajun Style Catfish Stew

Ingredients

2cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1lb. catfish fillets cut into 1/2" pieces
1lb. shrimp
1/2cup green bell pepper
1/2cup chopped onion
2cans canned tomatoes (whole)
1tsp. parsley
1tsp. oregano
1/2tsp. thyme leaves
2Tbsp. garlic minced
1package okra, frozen cut into 1/2" pieces
1/2tsp. red pepper flakes
1whole bay leaf
1/2tsp. cumin
4cups water
1/4tsp. black pepper

Instructions

1. Coat a Dutch oven with oil.
2. Sauté onion, green pepper, okra and garlic until tender.
3. Add tomatoes, red pepper, oregano, bay leaf, parsley, cumin, thyme, black pepper, rice and water; cover, reduce heat and simmer 20 minutes.
4. Peel and devein shrimp.
5. Add cut up pieces of catfish to Dutch oven.
6. Cover and simmer 15 minutes.
7. Stir in shrimp and return mixture to a boil; remove from heat.

tips and notes
Serve with slices of a toasted baguette and roasted red bell pepper spread.
