Ingredients
| 2 | cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 | lb. catfish fillets cut into 1/2" pieces |
| 1 | lb. shrimp |
| 1/2 | cup green bell pepper |
| 1/2 | cup chopped onion |
| 2 | cans canned tomatoes (whole) |
| 1 | tsp. parsley |
| 1 | tsp. oregano |
| 1/2 | tsp. thyme leaves |
| 2 | Tbsp. garlic minced |
| 1 | package okra, frozen cut into 1/2" pieces |
| 1/2 | tsp. red pepper flakes |
| 1 | whole bay leaf |
| 1/2 | tsp. cumin |
| 4 | cups water |
| 1/4 | tsp. black pepper |
Instructions
1. Coat a Dutch oven with oil.
2. Sauté onion, green pepper, okra and garlic until tender.
3. Add tomatoes, red pepper, oregano, bay leaf, parsley, cumin, thyme, black pepper, rice and water; cover, reduce heat and simmer 20 minutes.
4. Peel and devein shrimp.
5. Add cut up pieces of catfish to Dutch oven.
6. Cover and simmer 15 minutes.
7. Stir in shrimp and return mixture to a boil; remove from heat.
