Brown Rice Roll-Ups with Vegetables

Ingredients

1/3cup UNCLE BEN’S® Natural Whole Grain Brown Rice
1/4cup red and green bell peppers diced
3 plum tomatoes diced
2Tbsp. green onions diced
1/2cup shredded Monterrey Jack cheese
2tsp. olive oil
2Tbsp. lime juice
1/4cup poblano peppers diced
6 8-inch flour tortillas
2Tbsp. sour cream (low fat)

Instructions

1. Cook rice according to package directions.
2. Combine red and green peppers, tomato, green onions poblano peppers, olive oil, lime juice and sour cream. Mix well. Add cooked rice and stir in.
3. To prepare roll-ups, sprinkle 1 tablespoon of cheese and 3 tablespoons of vegetable rice mixture inside corn tortilla and roll firmly.

tips and notes
Warm tortillas or lightly fry them before rolling with mixture and cheese. Can also top with more cheese and bake in oven until cheese melts.
