Ingredients
| 1 | cup UNCLE BEN’S® Natural Whole Grain Brown Rice |
| 8 | chicken drumsticks |
| 1 | can diced tomatoes drained |
| 1 | can Mexican style corn drained |
| 1 | medium onion chopped |
| 1 | tsp. salt |
| 1 | envelope taco seasoning mix divided |
| non stick cooking spray |
Serve Chicken on top of rice mixture. Sprinkle with chopped cilantro for garnish

Instructions
1. Remove 2 tablespoons taco seasoning and reserve. Coat chicken with remaining taco seasoning mix.
2. Heat nonstick cooking spray in 12-inch skillet. Cook chicken over medium-low heat until brown, about 10 minutes on each side.
3. Cook rice according to package directions, adding 2 tablespoons taco seasoning mix to water.
4. When chicken is done, remove from pan and keep warm.
5. In the same skillet, sauté onion until translucent. Stir in tomatoes and corn until thoroughly heated.
6. Add cooked rice to tomato mixture and season with salt. Return chicken to skillet and serve.
