Broccoli Rice Au gratin with Stilton Cheese and Vegetables

Ingredients

1box UNCLE BEN’S® COUNTRY INN® Broccoli Rice Au Gratin
1/2cup Stilton cheese crumbled
1medium carrot peeled and sliced
10oz. broccoli florets
1medium tomato chopped
1/2cup pecans toasted and chopped
2 1/4Tbsp. white wine vinegar
1/4cup olive oil
salt and coarsely ground black pepper to taste

Instructions

1. Prepare the rice according to package instructions and transfer to serving dish.
2. Meanwhile, cook broccoli and carrots in a large pot of rapidly boiling water until crisp-tender. Drain and rinse under cold water.
3. Arrange broccoli and carrots over the rice. Sprinkle with chopped tomato, cheese and toasted pecans. Combine olive oil and vinegar in a small bowl; whisk to blend. Drizzle over salad. Season with salt and coarse black pepper. Serve immediately.
