Ingredients
| 1 | box UNCLE BEN’S® COUNTRY INN® Broccoli Rice Au Gratin |
| 1/2 | cup Stilton cheese crumbled |
| 1 | medium carrot peeled and sliced |
| 10 | oz. broccoli florets |
| 1 | medium tomato chopped |
| 1/2 | cup pecans toasted and chopped |
| 2 1/4 | Tbsp. white wine vinegar |
| 1/4 | cup olive oil |
| salt and coarsely ground black pepper to taste |
Instructions
1. Prepare the rice according to package instructions and transfer to serving dish.
2. Meanwhile, cook broccoli and carrots in a large pot of rapidly boiling water until crisp-tender. Drain and rinse under cold water.
3. Arrange broccoli and carrots over the rice. Sprinkle with chopped tomato, cheese and toasted pecans. Combine olive oil and vinegar in a small bowl; whisk to blend. Drizzle over salad. Season with salt and coarse black pepper. Serve immediately.
