Ingredients
| 1 | box UNCLE BEN’S® COUNTRY INN® Broccoli Rice Au Gratin |
| 1 | lb. sole fillets |
| 2 | Tbsp. onion chopped |
| 3/4 | lb. tomatoes seeded and chopped |
| 1/2 | lemon |
| 4 | Tbsp. butter |
| 1/4 | cup slivered almonds |
| 1/2 | bunch basil chopped |
| 1 | clove garlic minced |
| 1/4 | cup dry white wine |
| 1/4 | cup flour |
| 1 | tsp. oil |
| salt and pepper to taste |
Instructions
1. Toast almonds and rice in saucepan together 3-5 min in 1 tsp. oil
2. Add liquid and seasoning and cook rice according to package directions. Remove from heat and set aside.
3. While rice simmers, dredge the fish fillets in flour and shake off excess.
4. Cook fish in remaining butter in 10-inch skillet over medium heat 2 to 3 minutes per side or just until fish is opaque and flakes when tested with a fork.
5. Season to taste with salt and freshly ground pepper. Squeeze lemon. Transfer to serving plate and keep warm.
6. Add wine to same skillet; cook and stir, scraping drippings to loosen. Add onion and garlic; cook and stir 1 minute.
7. Add tomatoes and basil and cook until thickened, about 5 minutes. Stir in salt and pepper to taste.
8. Serve sauce over fish fillets, along side rice.
