There are plenty of fish in the sea. And they all go very nicely with rice.

Broccoli Rice and Sole with Fresh Tomato Basil Sauce

Ingredients

1box UNCLE BEN’S® COUNTRY INN® Broccoli Rice Au Gratin
1lb. sole fillets
2Tbsp. onion chopped
3/4lb. tomatoes seeded and chopped
1/2 lemon
4Tbsp. butter
1/4cup slivered almonds
1/2bunch basil chopped
1 clove garlic minced
1/4cup dry white wine
1/4cup flour
1tsp. oil
salt and pepper to taste

Instructions

1. Toast almonds and rice in saucepan together 3-5 min in 1 tsp. oil
2. Add liquid and seasoning and cook rice according to package directions. Remove from heat and set aside.
3. While rice simmers, dredge the fish fillets in flour and shake off excess.
4. Cook fish in remaining butter in 10-inch skillet over medium heat 2 to 3 minutes per side or just until fish is opaque and flakes when tested with a fork.
5. Season to taste with salt and freshly ground pepper. Squeeze lemon. Transfer to serving plate and keep warm.
6. Add wine to same skillet; cook and stir, scraping drippings to loosen. Add onion and garlic; cook and stir 1 minute.
7. Add tomatoes and basil and cook until thickened, about 5 minutes. Stir in salt and pepper to taste.
8. Serve sauce over fish fillets, along side rice.

tips and notes
Add a splash of cream to the sauce to tighten it up and give richness to the dish.
