Ingredients
| 1/3 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1/3 | package stir-fry vegetables 16 oz. (broccoli, carrots, onion), thawed |
| 2/3 | cup grated cheddar cheese |
| 3/4 | cup water |
| 1/3 | can cream-of-mushroom soup |
| cooking oil spray |
Instructions
1. Preheat oven to 375 degrees F. Spray a large baking dish with cooking spray.
2. Mix rice and stir fry vegetables together in baking dish.
3. In a separate bowl, combine water and soup. Pour mixture over rice.
Add 1/2 the cheese and mix thoroughly.
4. Cover dish and bake for 1-1/2 hours. Remove cover, add remaining cheese to top and bake for additional 15 minutes or until slightly brown.
