Broccoli Cheese Bake

Ingredients

1/3cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1/3package stir-fry vegetables 16 oz. (broccoli, carrots, onion), thawed
2/3cup grated cheddar cheese
3/4cup water
1/3can cream-of-mushroom soup
cooking oil spray

Instructions

1. Preheat oven to 375 degrees F. Spray a large baking dish with cooking spray.
2. Mix rice and stir fry vegetables together in baking dish.
3. In a separate bowl, combine water and soup. Pour mixture over rice.
Add 1/2 the cheese and mix thoroughly.
4. Cover dish and bake for 1-1/2 hours. Remove cover, add remaining cheese to top and bake for additional 15 minutes or until slightly brown.

tips and notes
Serve with roasted chicken, or this may also be served cold.
