Ingredients

2cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1cup black beans cooked and drained
1whole tomato seeded and chopped
1Tbsp. parsley snipped
1Tbsp. lime juice
lettuce leaves
cup shredded cheddar cheese
1/4cup Italian salad dressing prepared

Instructions

1. Combine rice, beans, tomato, cheese and parsley in a large bowl.
2. Pour dressing and lime juice over rice mixture; toss lightly.
3. Serve on lettuce.
