Ingredients
| 1/2 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 | package cranberry/orange relish thawed |
| 2 | cups half and half |
| 2 | eggs beaten |
| 1 | Tbsp. butter |
| 1 | tsp. orange zest shredded (optional) |
| 1/2 | cup sugar |
| 1 1/2 | tsp. cornstarch |
| 1 | tsp. vanilla |
| 1 | Tbsp. Grand Marnier |
Instructions
1. Cook rice according to directions on package. Set aside.
2. Combine sugar and cornstarch. Add half-and-half and sugar mixture to rice. Heat to boiling, stirring constantly. Boil 1 minute.
3. Remove from heat. Stir in butter and vanilla. Add a small amount of hot pudding (rice mixture) to beaten eggs. Blend with remaining pudding (rice mixture) mixture in saucepan.
4. Cook over medium heat, stirring constantly, until pudding starts to bubble. Remove from heat. Cool slightly. Cover and chill.
5. Combine cranberry orange relish and Grand Marnier; cover and chill.
6. Shortly before serving, layer pudding cranberry mixture in stemmed wine glasses or parfait glasses, beginning and ending with pudding.
7. Garnish with shredded orange peel, if desired.
