Beefsteak Tomato 'N Rice Salad

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
2medium beefsteak tomatoes cut into wedges
1small red onion cut into rings
1Tbsp. basil finely chopped
3Tbsp. parsley chopped
1 1/2Tbsp. sugar
2 1/4cups water
3Tbsp. vegetable oil
1/3cup red wine vinegar
1 1/2Tbsp. chives
1tsp. salt
1tsp. freshly ground black pepper to taste

Instructions

1. Cook rice according to package directions. Remove from heat. Let stand covered until all water is absorbed, about 5 minutes.
2. Transfer rice to large bowl. Combine vinegar, oil, basil, sugar salt and pepper. Add to hot rice, mixing well.
3. Cool to room temperature. Stir in tomato, onion, parsley and chives.
4. Cover and refrigerate several hours.

tips and notes
Chop all ingredients smaller and use to make vegetarian pita sandwiches.
