Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 3/4 | lb. cooked beef cut |
| 1/2 | lb. mushrooms quartered |
| lettuce |
| 4 | green onions sliced |
| 2 | cups sour cream |
| 1 1/2 | tsp. sugar |
| 2 1/4 | cups water |
| cayenne pepper |
| 3 | Tbsp. cider vinegar |
| 1 1/2 | tsp. prepared horseradish |
| 1 | cup celery sliced |
| 1 | tsp. salt (optional) |
Instructions
1. Cook rice in accordance with package directions but omit butter/margarine. After rice has cooked, remove from heat. Let stand covered until all water is absorbed, about 5 minutes. Place cooked rice in bowl, cool to room temperature.
2. Add mushrooms, celery and green onions.
3. In bowl, combine sour cream, vinegar, sugar and cayenne pepper; mix well. Reserve 3/4 cup dressing.
4. Add remaining dressing to rice mixture; toss lightly to mix. Cover; refrigerate until serving time, at least 2 hours.
5. To serve, stir horseradish into reserved dressing. Arrange rice mixture, and beef on lettuce-lined serving platter. Pour horseradish dressing over beef.
