Beef Stroganoff Rice Salad

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
3/4lb. cooked beef cut
1/2lb. mushrooms quartered
lettuce
4 green onions sliced
2cups sour cream
1 1/2tsp. sugar
2 1/4cups water
cayenne pepper
3Tbsp. cider vinegar
1 1/2tsp. prepared horseradish
1cup celery sliced
1tsp. salt (optional)

Instructions

1. Cook rice in accordance with package directions but omit butter/margarine. After rice has cooked, remove from heat. Let stand covered until all water is absorbed, about 5 minutes. Place cooked rice in bowl, cool to room temperature.
2. Add mushrooms, celery and green onions.
3. In bowl, combine sour cream, vinegar, sugar and cayenne pepper; mix well. Reserve 3/4 cup dressing.
4. Add remaining dressing to rice mixture; toss lightly to mix. Cover; refrigerate until serving time, at least 2 hours.
5. To serve, stir horseradish into reserved dressing. Arrange rice mixture, and beef on lettuce-lined serving platter. Pour horseradish dressing over beef.

tips and notes
Add in red pepper flakes to add spice to the dish.
