Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 2 | lb. round steak |
| 2 | Tbsp. green pepper diced |
| 1 1/2 | cups mushrooms sliced |
| 1 | can cream of mushroom soup |
| 1/4 | tsp. paprika |
| 2 | Tbsp. shortening |
| salt and pepper to taste |
Instructions
1. Cook rice according to package instructions.
2. Stir 1/2 cup of the soup and the peppers into the rice.
3. Place the steaks between pieces of film wrap and pound flat (about 1/4 of an inch thick).
4. Spread each steak with the rice mixture, leaving the outer inch free of topping, and then carefully roll up each steak.
5. Fasten together securely with metal skewers, or tie with twine or string.
6. Melt the shortening in a frying pan and brown the meat, turning carefully to brown all sides.
7. Add 1/4 cup of water, cover and cook over a low heat until the meat is tender, about 1-1/4 to 1-1/2 hours. Add the remaining 1/4 cup water, if needed.
8. Remove the meat from the pan and let stand for 15-20 minutes before slicing with a sharp knife.
9. Add the mushrooms to the pan juices and cook until tender, about 5-8 minutes, then stir in the remaining condensed soup and paprika. Salt and pepper to taste.
10. Serve over the sliced meat rolls.
