Ingredients
| 1 | UNCLE BEN’S® COUNTRY INN® Mexican Fiesta Rice |
| 1 | lb. beef round steak cut into bite size cubes |
| 1 | green bell pepper cut into strips |
| 1 | cup onion cut into strips |
| 2 | roma tomatoes cut into wedges |
| 1 | can pinto beans |
| 1/4 | cup chicken or beef broth |
| 1 | tsp. barbecue or mexican seasoning |
| non stick cooking spray |
Instructions
1. Prepare rice according to package directions.
2. Apply non-stick skillet with pan coating spray. Add beef and cook for 3 to 4 minutes or until almost completely cooked. Add broth, seasoning, and vegetables to meat and cook another 2-3 minutes or until vegetables are tender. Heat pinto beans and serve with rice and picado.
