Ingredients
| 1 | package UNCLE BEN’S® COUNTRY INN® Chicken & Wild Rice |
| 4 | boneless skinless chicken breasts |
| 1 | red bell pepper cut into large dice |
| 1 | zucchini cut into bite sized pieces |
| 1 | ear of corn cut into 1-inch pieces |
| 1 | Tbsp. Italian seasoning |
| 1 | cup barbeque grilling sauce |
| non stick cooking spray |
Instructions
1. Heat grill and prepare rice according to package directions.
2. Apply non-stick coating spray to vegetables and sprinkle Italian seasoning on vegetables. Using 4 aluminium foil sheets, place a portion of vegetable mixture onto each sheet and wrap tightly. Place foil pillows on grill and cook for 20 minutes.
3. While vegetables are grilling, add chicken and baste with sauce. Cook chicken about 5 minutes on each side while basting with sauce. Serve chicken with vegetables and rice.
