Ingredients
| 1 1/2 | cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 5 | lb. duck |
| 1 1/2 | tsp. ginger minced |
| 1/4 | cup walnuts chopped |
| 3 | cloves garlic minced |
| 3 | scallions minced |
| 1/2 | cup soy sauce |
| 1/4 | cup ketchup |
| 1/4 | cup brown sugar |
| 1/2 | cup sherry |
| 1 | serrano pepper(s) seeded and chopped fine |
Instructions
1. Cut the duck into pieces, wash and pat dry, then place in large bowl.
2. Mix together the garlic, ginger, scallions, serrano chili, soy sauce, sherry, and brown sugar, mixing well. Pour over the duck pieces, reserving 1 1/2 cups, allow to marinate for 3 hours.
3. To make the sauce, mix together the ketchup with 1 1/2 cups of the marinade and bring to a boil.
4. Grill over charcoal or bake the duck pieces in a hot oven, coat with the sauce just before they are fully cooked.
5. Serve over rice, mixed with walnuts.
