Barbecue Bonus Salad #2

Ingredients

3 1/2cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1/2cup radishes sliced
1large tomato cut into wedges
1 cucumber diced
1medium onion minced
2cups celery sliced
mixed greens
1cup plain low-fat yogurt
3/4cup mayonnaise
4tsp. Dijon mustard
salt and pepper to taste

Instructions

1. Cook rice according to package instructions.
2. Combine rice, onion and celery in large bowl.
3. Combine yogurt, mayonnaise, mustard and salt. Add to rice mixture; mix well. Cover and chill.
4. Just before serving, stir in radishes and cucumber.
5. Serve in bowl lined with salad greens, garnished with tomato wedges.

Serve along side BBQ ribs or chicken.
