Ingredients
| 3 1/2 | cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1/2 | cup radishes sliced |
| 1 | large tomato cut into wedges |
| 1 | cucumber diced |
| 1 | medium onion minced |
| 2 | cups celery sliced |
| mixed greens |
| 1 | cup plain low-fat yogurt |
| 3/4 | cup mayonnaise |
| 4 | tsp. Dijon mustard |
| salt and pepper to taste |
Instructions
1. Cook rice according to package instructions.
2. Combine rice, onion and celery in large bowl.
3. Combine yogurt, mayonnaise, mustard and salt. Add to rice mixture; mix well. Cover and chill.
4. Just before serving, stir in radishes and cucumber.
5. Serve in bowl lined with salad greens, garnished with tomato wedges.
