Bangkok Chicken and Rice

Ingredients

2cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1 1/4lb. chicken meat cooked and shredded
3/4cup cooked ham diced
1 cucumber sliced thin
1/4lb. prawns cooked and peeled
2 hard boiled eggs cut into wedges
2 1/2cups onion peeled and chopped
1 clove garlic crushed
3Tbsp. olive oil
2Tbsp. peanut butter
1tsp. mace
1/2tsp. ground chilies
1 1/2tsp. coriander
1tsp. cumin seed
salt and pepper to taste

Instructions

1. Cook the rice according to package instructions and cool.
2. Cook and peel the prawns, reserve 4 for garnish.
3. Heat the oil in a large pan and fry the onions until soft, but not brown.
4. Add the peanut butter and ground chilies, then the peeled prawns, diced ham, chicken and cooled rice.
5. Continue frying over a gentle heat, while stirring and mixing well, until the rice is slightly browned.
6. Add the cumin, coriander, garlic and mace into the rice and season to taste with salt and pepper.
7. Pile the rice and chicken mixture onto a hot serving dish and serve garnished with thin slices of cucumber, wedges of hard-boiled egg and prawns.

tips and notes
Omit the hard-boiled eggs for garnish, and instead scramble the egg until it is brown and add to shrimp mixture.
