Baked Rice and Cheese Italiano

Ingredients

1 1/2cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1can chopped tomatoes
2medium onions sliced
1cup shredded sharp cheddar cheese
1cup shredded parmesan cheese
2 cloves garlic minced
1tsp. fresh basil chopped
1cup whipping cream
1/4cup butter or margarine
2medium zucchini sliced 1/2"
1cup water
2tsp. salt
1/4tsp. pepper
1can chicken broth
1 1/2cups dry white wine

Instructions

1. Cook rice according to package instructions.
2. Preheat oven to 400 degrees F. Combine rice with all ingredients except cheese and cream in a 13-1/2" x 8-1/2" baking dish; mix. Cover with aluminum foil, crimping it tightly to edges of dish.
3. Bake 1 hour, stirring at the end of 30 minutes.
4. Uncover. Stir in cheeses and cream. Return to oven. Continue baking, uncovered, 10 minutes longer.

tips and notes
Try adding Italian sausage for a much more intense flavor, and serve this dish with crispy garlic bread.
