Ingredients
| 1 1/2 | cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 | can chopped tomatoes |
| 2 | medium onions sliced |
| 1 | cup shredded sharp cheddar cheese |
| 1 | cup shredded parmesan cheese |
| 2 | cloves garlic minced |
| 1 | tsp. fresh basil chopped |
| 1 | cup whipping cream |
| 1/4 | cup butter or margarine |
| 2 | medium zucchini sliced 1/2" |
| 1 | cup water |
| 2 | tsp. salt |
| 1/4 | tsp. pepper |
| 1 | can chicken broth |
| 1 1/2 | cups dry white wine |
Instructions
1. Cook rice according to package instructions.
2. Preheat oven to 400 degrees F. Combine rice with all ingredients except cheese and cream in a 13-1/2" x 8-1/2" baking dish; mix. Cover with aluminum foil, crimping it tightly to edges of dish.
3. Bake 1 hour, stirring at the end of 30 minutes.
4. Uncover. Stir in cheeses and cream. Return to oven. Continue baking, uncovered, 10 minutes longer.
