Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 | can pineapple chunks |
| 4 | Tbsp. butter |
| 1/2 | cup brown sugar |
| 1 1/3 | cups water (to prepare rice) |
Instructions
1. Cook rice according to package instructions. Drain off pineapple juice and reserve.
2. Cut pineapple into small pieces.
3. Butter a deep pie dish.
4. Spoon in 1/3 of the rice and cover with half the pineapple. Dot with butter and sprinkle with sugar.
5. Repeat the layers of rice and pineapple, sprinkling with sugar and butter.
6. Finish with the remaining rice.
7. Pour the reserved pineapple juice over the pudding and bake, covered, for about 1 hr. at 350°F degrees.
8. Serve with whipped cream (optional).
