Baked Curried Chicken with Orange Rice

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
2 1/2lb. chicken quartered
1tsp. orange rind grated
1/3cup toasted almonds (optional)
2 1/4cups water
1 1/2tsp. curry powder
1/2tsp. mustard
1/2tsp. paprika
1tsp. garlic salt
1tsp. salt
1/4cup honey

Instructions

1. Combine honey, curry powder, garlic salt, paprika and mustard; mix well. Spread over both sides of chicken quarters.
2. Arrange chicken quarters in shallow baking dish, skin side down. Bake at 350 degrees F for 15 minutes; turn and bake 15 minutes longer.
3. Remove chicken quarters from baking dish. Add rice, salt, orange rind and water; stir.
4. Arrange chicken quarters on top. Cover dish with aluminum foil, crimping it to edges of dish. Bake 40 minutes.
5. Uncover and let stand until liquid is absorbed, 5 to 10 minutes. Sprinkle with almonds, if desired.
