Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 2 1/2 | lb. chicken quartered |
| 1 | tsp. orange rind grated |
| 1/3 | cup toasted almonds (optional) |
| 2 1/4 | cups water |
| 1 1/2 | tsp. curry powder |
| 1/2 | tsp. mustard |
| 1/2 | tsp. paprika |
| 1 | tsp. garlic salt |
| 1 | tsp. salt |
| 1/4 | cup honey |
Instructions
1. Combine honey, curry powder, garlic salt, paprika and mustard; mix well. Spread over both sides of chicken quarters.
2. Arrange chicken quarters in shallow baking dish, skin side down. Bake at 350 degrees F for 15 minutes; turn and bake 15 minutes longer.
3. Remove chicken quarters from baking dish. Add rice, salt, orange rind and water; stir.
4. Arrange chicken quarters on top. Cover dish with aluminum foil, crimping it to edges of dish. Bake 40 minutes.
5. Uncover and let stand until liquid is absorbed, 5 to 10 minutes. Sprinkle with almonds, if desired.
