Bacon and Egg Roll-Ups

Ingredients

4cups UNCLE BEN’S® Boil-In-Bag Rice
6strips bacon cooked and crumbled
3 eggs slightly beaten
2 plum (roma) tomatoes diced
1/2cup cheddar cheese grated
3 green onions, chopped
4 6" flour tortillas warmed

Instructions

1. Cook rice according to package instructions.
2. In a large skillet, fry bacon until crispy. Drain grease and crumble bacon in pan. Add cooked rice and mix well. Push to side of pan.
3. Add egg and scramble. Stir into rice mixture. Remove from heat and stir in tomatoes and onion.
4. Place 1/3 cup egg mixture on tortilla. Roll and serve warm.
5. Garnish with cheddar cheese.

tips and notes
Add in chopped green chilies for a little spice and flavor. You may substitute sausage for the bacon if desired.
