Ingredients
| 4 | cups UNCLE BEN’S® Boil-In-Bag Rice |
| 6 | strips bacon cooked and crumbled |
| 3 | eggs slightly beaten |
| 2 | plum (roma) tomatoes diced |
| 1/2 | cup cheddar cheese grated |
| 3 | green onions, chopped |
| 4 | 6" flour tortillas warmed |
Instructions
1. Cook rice according to package instructions.
2. In a large skillet, fry bacon until crispy. Drain grease and crumble bacon in pan. Add cooked rice and mix well. Push to side of pan.
3. Add egg and scramble. Stir into rice mixture. Remove from heat and stir in tomatoes and onion.
4. Place 1/3 cup egg mixture on tortilla. Roll and serve warm.
5. Garnish with cheddar cheese.
