Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 | avocado |
| 2 | green onions sliced |
| 1/4 | tsp. thyme leaves |
| 1 | jar pimientos diced |
| 1/8 | tsp. pepper |
| 1 | tsp. salt |
| 1/4 | cup half & half |
| 1 | can chicken broth |
Instructions
1. Add enough water to chicken broth to make 2-1/4 cups liquid. Bring to a boil in large saucepan.
2. Stir in rice, salt, thyme and pepper. Cover and simmer 20 minutes.
3. Stir in pimiento and onions. Remove from heat. Let stand covered until all liquid is absorbed, about 5 minutes.
4. Peel avocado; remove seed. Cut avocado lengthwise into 1/2-inch slices; cut each slice in half crosswise.
5. Stir avocado and cream into rice.
