Ingredients
| 1 | box UNCLE BEN’S® COUNTRY INN® Broccoli Rice Au Gratin |
| 4 | chicken breast halves pounded 1/2" thick |
| 2 | carrots peeled, ends removed, and cut into 4" julienned strips |
| 1 | Tbsp. grated carrots |
| 1/2 | lb. green beans ends removed |
| 1 | tsp. tarragon |
| 2 | Tbsp. butter |
| 4 | green onions |
| 2 | Tbsp. oil |
| flour |
| salt and pepper |
Instructions
1. Prepare rice according to package directions.
2. While rice simmers, sprinkle chicken with flour, salt and pepper.
3. Cook chicken in oil in 10-inch skillet until golden brown and cooked through, about 4 minutes each side. Move chicken to platter and keep warm.
4. Slice carrots into 4" long julienne strips, grate 1 tbsp of carrot. In same skillet, cook and stir carrots and green beans in butter for 3 minutes.
5. Slice onions in half lengthwise and cut into 4-inch pieces. Add onions and tarragon to skillet; cook and stir until onions are crisp-tender.
6. Serve rice in center of platter, sprinkle with grated carrot. Place chicken pieces around rice and top with vegetable mixture.
