Autumn Vegetables with Chicken and Rice

Ingredients

1box UNCLE BEN’S® COUNTRY INN® Broccoli Rice Au Gratin
4 chicken breast halves pounded 1/2" thick
2 carrots peeled, ends removed, and cut into 4" julienned strips
1Tbsp. grated carrots
1/2lb. green beans ends removed
1tsp. tarragon
2Tbsp. butter
4 green onions
2Tbsp. oil
flour
salt and pepper

Instructions

1. Prepare rice according to package directions.
2. While rice simmers, sprinkle chicken with flour, salt and pepper.
3. Cook chicken in oil in 10-inch skillet until golden brown and cooked through, about 4 minutes each side. Move chicken to platter and keep warm.
4. Slice carrots into 4" long julienne strips, grate 1 tbsp of carrot. In same skillet, cook and stir carrots and green beans in butter for 3 minutes.
5. Slice onions in half lengthwise and cut into 4-inch pieces. Add onions and tarragon to skillet; cook and stir until onions are crisp-tender.
6. Serve rice in center of platter, sprinkle with grated carrot. Place chicken pieces around rice and top with vegetable mixture.
