Ingredients
| 1 1/2 | cups UNCLE BEN’S® Natural Whole Grain Brown Rice |
| 8 | oz. tofu sliced |
| 1 5/8 | cups sliced mushrooms |
| 1 | cup onion sliced |
| 3 | medium carrots sliced thin |
| 2 | Tbsp. peanut oil |
| 2 1/2 | Tbsp. garlic minced |
| 1/3 | cup basil chopped |
| 1 1/2 | Tbsp. jalepeño pepper(s) minced |
Instructions
1. Cook the rice according to package directions.
2. In the peanut oil, sauté the tofu until it begins to brown. Add the sliced onions and carrots; continue to sauté for about 2 more minutes.
3. Add the garlic, basil, jalapeno and the mushrooms. Sauté for another 2 minutes.
4. Mix the cooked vegetables and tofu into the finished rice.
