Asian Brown Rice with Tofu

Ingredients

1 1/2cups UNCLE BEN’S® Natural Whole Grain Brown Rice
8oz. tofu sliced
1 5/8cups sliced mushrooms
1cup onion sliced
3medium carrots sliced thin
2Tbsp. peanut oil
2 1/2Tbsp. garlic minced
1/3cup basil chopped
1 1/2Tbsp. jalepeño pepper(s) minced

Instructions

1. Cook the rice according to package directions.
2. In the peanut oil, sauté the tofu until it begins to brown. Add the sliced onions and carrots; continue to sauté for about 2 more minutes.
3. Add the garlic, basil, jalapeno and the mushrooms. Sauté for another 2 minutes.
4. Mix the cooked vegetables and tofu into the finished rice.

tips and notes
Near end of cooking, add in ¼ cup of teriyaki sauce
