Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1/2 | medium green pepper chopped |
| 1 | large tomato chopped |
| 1/4 | cup butter |
| 1 | medium onion chopped |
| 1 | clove garlic peeled and crushed |
| 1 1/2 | cups chicken stock |
| 1 | cup tomato juice |
| 1/2 | tsp. ground cumin |
| salt to taste |
Instructions
1. Heat the butter, add rice and fry gently until it begins to brown.
2. Chop pepper, onion and tomato. Peel and crush garlic. Add to rice with the cumin and salt to taste.
3. Cook together for 3 to 4 minutes, stirring well.
4. Heat stock and tomato juice. Add the remaining liquid to the rice, cover and cook over low heat.
5. The rice should be soft and all liquid absorbed.
