Ingredients
| 1/4 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1/3 | cup dried apricots chopped |
| 8 | oz. apricot yogurt |
| 1/3 | cup apricot nectar |
| 1 | package quick nut bread mix |
| 1 | egg slightly beaten |
| 1/4 | tsp. butter |
| 2/3 | cup water |
| 1/4 | tsp. salt |
| 2 | Tbsp. flour |
Instructions
1. Preheat oven to 350 degrees. Butter and flour a 9" x 5" loaf pan.
2. Cook rice with 2/3 cup water, 1/4 teaspoon salt and 1 teaspoon butter or margarine according to package directions. Cool.
3. In a large bowl, combine quick nut-bread mix, apricots and flour; mix.
4. Add cooked rice, yogurt, apricot nectar and the egg. Add water to achieve batter consistency if
necessary.
5. Stir until dry ingredients are moistened.
6. Spoon batter into prepared pan. Bake until done and lightly browned, about 1 hour.
7. Let cool in pan 10 minutes. Turn out on wire rack and cool.
