Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 1/2 | lb. smoked sausage sliced |
| 2 | medium carrots cut into 1-1/2" lengths |
| chopped parsley |
| 1 | medium onion separated into rings |
| ground cloves |
| 1 | can sauerkraut well drained |
| 1 | Tbsp. brown sugar |
| 1/4 | tsp. pepper |
| 1 1/2 | cups chicken broth |
| 1 | cup dry white wine |
| 3 | slices bacon halved |
| 1 | bay leaf |
Instructions
1. Cook bacon and onion in 12-inch skillet until bacon is browned but not crisp and onion is tender. Remove bacon and drain off all but 1 tablespoon drippings.
2. Stir in chicken broth, wine, sugar, pepper, cloves, and bay leaf. Bring to a boil.
3. Stir in rice, sauerkraut and carrots. Arrange bacon and sausage over rice. Cover tightly and simmer 20 minutes.
4. Remove from heat. Let stand covered until all liquid is absorbed, about 5 minutes.
5. Remove bay leaf. Sprinkle with parsley.
