Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1can pineapple chunks
1Tbsp. butter
1tsp. salt
1/4cup toasted coconut

Instructions

1. Drain pineapple, reserving juice. Add enough water to juice to equal 2-1/4 cups.
2. Bring to a boil in medium saucepan.
3. Stir in rice, butter and, if desired, salt. Cover tightly and simmer 20 minutes.
4. Stir in pineapple. Remove from heat. Let stand covered until all liquid is absorbed, about 5 minutes. Sprinkle with coconut.

Add in sliced green onions and diced apple for spice and crunch.
