Soup’s on! And it’s a soup recipe that will become a favorite in your home. Prepared with chicken or turkey (your choice) and a touch of sherry.
Cook rice according to package instructions, set aside.
In a large pot coated with non-stick cooking spray, sauté the onion and carrots over medium heat until tender, about 5 minutes. Add in the sherry and combine with the vegetables, cook until the liquid is gone.
Stir in the flour until it has coated the vegetables evenly. Gradually add the broth and bring to a boil.
Add in the chicken and rice then stir until well combined. Let simmer 5 minutes or until chicken is warm.
Add in 1/2 tsp lemon juice, and season with salt and pepper as desired.
