2 Tbsp. green onions diced
2 Tbsp. sour cream (low fat)
2 tsp. olive oil
2 Tbsp. lime juice
1/3 cup UNCLE BEN’S® Natural Whole Grain Brown Rice
1/4 cup poblano peppers diced
1/4 cup red and green bell peppers diced
6 8-inch flour tortillas
3 plum tomatoes diced
1/2 cup shredded Monterrey Jack cheese

A rice treat for vegetarians! This recipe combines sour cream, peppers, tomatoes and Monterey Jack cheese in a tidy tortilla roll-up.
  1. Cook rice according to package directions.
  2. Combine red and green peppers tomato green onions poblano peppers olive oil lime juice and sour cream. Mix well. Add cooked rice and stir in.
  3. To prepare roll-ups sprinkle 1 tablespoon of cheese and 3 tablespoons of vegetable rice mixture inside flour tortilla and roll firmly.
